Foods of Provence
Located on the Mediterranean Sea in the south of France, this food-lover’s paradise is more akin to neighboring Italy than the rest of France. Olive oil, garlic and tomatoes – along with fresh vegetables, herbs and seafood – are characteristic of this world-class cuisine. Come learn to prepare the finest foods of Provence; then sit down to enjoy la cuisine du soleil (the cuisine of the sun).
SKILLS AND TECHNIQUES Preparing and cooking seafood; cooking with saffron; making a vinaigrette; breading and sautéing goat cheese; making custard; using a blow torch to caramelize sugar.
Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.) Alcohol is not served at our Anchorage location.
