French Outdoor Café
Mention a French outdoor café, and images of diners seated at quaint, umbrella-covered tables spring to mind. You may even envision Hemingway or Fitzgerald sipping on a café crème while composing their next great novel. Despite common misconceptions, French food is often light, simple fare that relies on fresh, seasonal ingredients and classical cooking techniques. In our Café class, we’ll prepare ideal dishes for warm-weather entertaining that you can serve as a special occasion luncheon or a light, summer dinner. Bon appétit!
SKILLS AND TECHNIQUES Making a batter; preparing creamy soup; blanching vegetables; making a vinaigrette; searing fish; making, tenderizing and rolling out pastry dough; lining tart pans and baking blind; making pastry cream.
Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.) Alcohol is not served at our Anchorage location.
