Italian Culinary Concepts


This 3-day (once a week)  series is designed to completely immerse you in the cuisine of Italy.  You will learn that basis of Italian cuisine revolves around choosing fresh ingredients and then applying simple techniques to highlight those ingredients.  From Tuscan porterhouse to tiramisu, this series will inspire you with the wonderful flavors of Italy.

Classes are held Wednesdays, October 2, October 9 and October 16.

Day One Menu:

  • Marinated Zucchini, Roasted Red Peppers and Eggplant with Crostini
  • Risotto with Arugula and Prosciutto
  • Veal Piccata
  • Endive and Bel Paese Salad
  • Tiramisu

Day Two Menu:

  • Lemon Shrimp Bruschetta
  • Basic Pasta Dough
  • Homemade Pasta with Gorgonzola Sauce
  • Tuscan-Style Beefsteak for Two (Bistecca alla Fiorentina)
  • Broccoli with Garlic and Olive Oil (Broccoli Aglio Olio)
  • Romaine and Radicchio Salad with Shaved Pecorino Romano
  • Chocolate Biscotti
  • Sample Recipe:  Hazelnut Gelato

Day Three Menu:

  • Marinated Fresh Mozzarella and Olives with Crostini
  • Polenta with Wild Mushrooms
  • Pan-Roasted Fish with Sicilian Salmoriglio Sauce
  • Sauteed Spinach with Pine Nuts
  • Shaved Fennel and Orange Salad
  • Panna Cotta with Fresh Berries
